A SWT▸ (South West Trains) guard wrote 07/01 on my return portion of an off-peak return today. It got me wondering, if I was to break my journey could I still continue the following day (or indeed any day within the 1 month validity)?

Yes, you can break the return portion as many times as you want within the 1 month validity.  See http://www.nationalrail.co.uk/times_fares/ticket_types/46590.aspx

Barry Doe has reported that some Guards like to write the date in.  Whilst in itself that is not a bad thing (some ticket stamps are dated), I can't see why they would do this other than because they don't understand the rules because the validity runs to the expiry date which is already printed on the ticket.
