Now I agree with the validity bit, and I know it's been a while since I bought a ticket, but is it really the last peak train these days?

It is indeed, the Off Peak restriction is until 1831, with Super Off Peak being 1901.

If you define "West Country" as Taunton and beyond, then yes ... fares to Taunton

105.00 on the 18:03 (I assume we mean that rather than the 18:30 which is a Bristol service)

It's ^57 to stations on the Barnstaple on the 18:03 - it's the last connection, so off-peak tickets are valid.

The 1830 could well be Off Peak to any number of destinations if you are changing and/or having an overnight break of journey en-route. Most of West Wales, Llanelli and beyond, for example.

Also the 18:03 is Off-peak if travelling to Newton Abbot or beyond.
