If you take the tables out of (say) a 158, how much could this be worth in terms of extra seats?

Well, that BBC report suggests 140 seats, being increased to 160 seats by removing tables - 13% more?

And it will cost ^10m.

That train looks like an ex Wales and West/ATW/Wessex 158! How many of them do East Midlands Trains have?
