It got me wondering, if I was to break my journey could I still continue the following day (or indeed any day within the 1 month validity)?

Barry Doe has reported that some Guards like to write the date in. Whilst in itself that is not a bad thing (some ticket stamps are dated), I can't see why they would do this other than because they don't understand the rules because the validity runs to the expiry date which is already printed on the ticket.
