Other than booking well in advance on the euro star site, any better ways of getting good fares for a trip from st prancas to Amsterdam in December?

I seem to recall reading either here or elsewhere that it was at one time cheaper to book Eurostar tickets on the now defunct rail europe website. It now directs you to http://uk.voyages-sncf.com/en/

As for where you can get a good deal, I don't know. Is there a comparison site for international train journeys as there is for planes?

Not what you're asking for johngreg, but I use the Dutch Flyer to get to the Netherlands:
